American-Style Pancakes With Berries
Not just for Shrove Tuesday, these delicious, American-style fluffy pancakes are served stacked high year-round at Harpers Steakhouse, Swanwick Marina, part of Upham Inns. However the chef has shared the recipe if you want to make your own.
Ingredients
135g/4¾oz plain flour
1 tsp baking powder
½ tsp salt
2 tbsp caster sugar
130ml/4½fl oz milk
1 large local free range egg, lightly beaten
2 tbsp melted butter (allowed to cool slightly)
Method
1 Combine all ingredients in a large bowl and mix until well blended.
2 Heat a large non-stick frying pan over a medium-high heat.
3 Spoon a portion of the batter into the pan. The surface will begin to bubble. When most of the bubbles have popped (about 3 minutes), flip the pancake, and cook for 2 to 3 more minutes.
4 Stack the cooked pancakes on a baking tray in a low temperature oven to keep them warm while cooking the rest.
5 Pile the warm pancakes onto a serving dish, top with blueberries or New Forest Fruit strawberries and drizzle maple syrup over the top.
