Stack 'Em High on Pancake Day
For many Shrove Tuesday is a favourite day of the foodie calendar, allowing us to stuff ourselves with pancakes. Every year some of us also find ourselves wondering why we don’t make pancakes more often. Pancakes, whether traditional English style flat pancakes or smaller, thicker, fluffier American style pancakes, are inexpensive, quick to make, and loved by the family. English pancakes are usually served with lemon wedges and sugar, while American pancakes are plied high and topped with fruits and dribbled with maple syrup.
For the perfect pancake don’t forget to buy local ingredients, including free range eggs (such as Beechwood Eggs, Claytons Eggs, Fluffetts Farm Eggs, and Vale Farm), local milk (for example Dandy’s Ford Dairy and Michelmersh Dairy, both in the Test Valley, and Briddlesford Farm if you're on the Isle of Wight). You could even use local spelt flour from Wheatsheaf Farming which is perfect for pancakes, adding a little more texture and flavour. Instead of maple syrup or sugar, what about using local honey usch as Mrs B's Bees or Beckys Beezzzs? Find local ingredients from local delis, farm shops and Southern Co-op stores.
