Cheesy Watercress Tortilla Canapes

Cheesy Watercress Tortilla Canapes
Makes between 4-8 per tortilla, depending on cutter size
Ingredients:
3 Tortillas
80g local watercress, chopped with big stalks removed
70g local cheese, such as Lyburn Gold, grated (or use any combination of cheese)
50g local hard cheese, such as Lyburn Old Winchester, grated
Coldpressed Rapeseed Oil
Paprika
Salt & Pepper
Chives, chopped finely
Method
Preheat the oven to 180° and grease a muffin tray.
Using a pastry cutter the same size as the cups of the muffin tray, cut circles from your tortillas. Place the circles in the muffin tray, one per cup. Press them in and brush the tops with a little oil.
Fill the cups with a 50:50 ratio of grated cheese and chopped watercress. Sprinkle a little Old Winchester over the top of each, plus a pinch of paprika and season with salt and pepper.
Bake in the oven for around 7 minutes until the tortillas are golden and the cheese has melted. Sprinkle over some of the chives, and serve!
