Cheesy Watercress Tortilla Canapes

Cheesy Watercress Tortilla Canapes

Hold a get together and treat friends, family and neighbours to drinks and canapes over the festive season. Make some special, yet easy nibbles using local ingredients for tasty canapes such as these from the Watercress Company. They are also a great way to use up any leftovers from the cheeseboard. What’s more, with watercress as a key ingredient, these canapes contain over 50 vital vitamins and minerals.

Did you know gram for gram watercress contains more vitamin C than an orange, essential for supporting the immune system in winter, more calcium than milk, more folate than a banana and more vitamin E than broccoli?  High in iron and a rich source of protein and fibre, watercress is a health food gift for all of us!

Cheesy Watercress Tortilla Canapes

Makes between 4-8 per tortilla, depending on cutter size

3 Tortillas

80g local watercress, chopped with big stalks removed

70g local cheese, such as Lyburn Gold, grated (or use any combination of cheese)

50g local hard cheese, such as Lyburn Old Winchester, grated

Coldpressed Rapeseed Oil

Salt & Pepper

Chives, chopped finely

Preheat the oven to 180° and grease a muffin tray.

Using a pastry cutter the same size as the cups of the muffin tray, cut circles from your tortillas. Place the circles in the muffin tray, one per cup. Press them in and brush the tops with a little oil.

Fill the cups with a 50:50 ratio of grated cheese and chopped watercress. Sprinkle a little Old Winchester over the top of each, plus a pinch of paprika and season with salt and pepper.

Bake in the oven for around 7 minutes until the tortillas are golden and the cheese has melted. Sprinkle over some of the chives, and serve!
