What's Cooking? Masterclass with Angela Hartnett
Tracy from Hampshire Fare took a day out of the office to take a Masterclass with Angela Hartnett and Luke Holder of Hartnett Holder & Co, Lime Wood.
“I had a fantastic day learning how to make pasta, fillet a bream and make an apple tarte tatin. Pasta was made using eggs from Fluffets. Luke explained that the eggs are key to a successful pasta and the better the egg the yellower the pasta. Our pasta was very yellow. I thoroughly enjoyed being among the busy hustle bustle of the kitchen. Learning key skills like filleting a fish is a real art and quite time-consuming; it made me realise just how much effort beforehand goes into delivering superb dishes to your table.
"While we were working away, Hugo from Chalk Stream popped in to deliver the freshest of Hampshire trout. It was good to see another familiar face.
"There was a great group of people on the masterclass... We were all furnished with a Hartnett & Holder apron, recipes from the day and we ate what we cooked including plating it up – that bit was quite stressful!
All in all, it was a delicious day; wines were served to match the courses, and there was also a charcuterie board from Laverstoke, smoked salmon and cod roe…
