Two Minds, One Vision (and a very cool van)
Jimmy Bean has become well-known in the area for his cute van and addictive artisan coffee. It was over a cup of this coffee that Jimmy and Adam got talking.
Whilst Jimmy was busy taking his van to events and locations across the county, Adam was running a pop-up restaurant. Adam asked if Jimmy would hand out fliers to his customers. Soon conversations moved to their love of food, their ideas of how to serve this and before long they were fusing their visions.
The coffee was soon replaced by beer and after a few evenings in the pub firming up how to move their joint vision forward ‘Savage & Bean’ was born. It was to combine Jimmy’s van with an outdoor cooking area and wood-fired oven.
This was back in April, they have just finished their first summer working together and it’s been non-stop. They are both full of enthusiasm for the collaboration. Savage & Bean has just moved into new premises giving them a place for food preparation and crucially a place for the beloved van.
It is clear this is just the beginning with Jimmy and Adam still both full of ideas of how to move the venture forward. Jimmy explains; “We both have strong views but it works because we listen to each other. It’s a real partnership. We have a shared passion for really good food.”
Adam elaborates; “People, good times and good food – that’s what we’re about. One of our most popular dishes is our 16 hour slow-cooked beef brisket. It’s cured in bourbon whiskey and molasses and oak-smoked. Served in a pretzel roll with homemade mayonnaise using Isle of Wight garlic and coleslaw.”
Both Adam and Jimmy have trained and worked in kitchens and restaurants across the globe. They share a passion for sourcing food locally and have developed strong relationships with lots of Hampshire producers.
