Tuck into trout
The health benefits of oily fish have been well-documented with strong links made to improving cognitive development and also reducing the risk of cardiac illnesses. Hampshire’s crystal clear river waters are home to beautiful trout which can be bought and enjoyed locally. Look out for Hampshire trout on pub and restaurant menus.
Keep cooking simple and enjoy the full flavour of the fish. Rub with local rapeseed oil, slit the skin of the fish and fill with parsley and lemon. Season and pop a few blobs of butter along the fish. Grill for about 7 minutes each side.
