The Mill at Gordleton welcomes award-winning new head chef

Ian Gibbs has been appointed as head chef at The Mill at Gordleton to champion local, seasonal produce in the heart of the New Forest. The award-winning restaurant, hotel and event venue owned by the Upham Group, is well known for its stunning setting, appetising menu and warm hospitality. Ian’s talent and knowledge within the food industry make him a fantastic addition to the talented team.

Originally from the Midlands, Ian settled in Dorset 14 years ago. With a real passion for reducing food miles, he is committed to using high-quality produce from the local area that is in season and therefore at its very best. This is how he sets about creating his various menus (from breakfast to à la carte to irresistible Sunday roasts), carefully designing refined and delicious dishes to be enjoyed in a beautiful environment with attentive and professional service.

Over the years Ian has received plenty of prestigious national and international awards, including Rioja Chef of the Year and more recently The Dorset and Hampshire Chef of the Year. He has presented at various food festival demonstrations, including the Christchurch Food Festival, showcasing amazing food and his unique style. A highlight of Ian’s career to date was being selected to cook for Her Majesty the Queen and the Duke of Edinburgh at Gloucester Cathedral for the Maundy Thursday service. Within his South West cooking adventures, Ian has achieved many AA Rosettes and held the only Michelin Bib Gourmand award in Dorset in 2013/14 and successfully retained it in 2014/15.

Ian and his highly-dedicated team at The Mill at Gordleton will utilise produce from Hampshire, Dorset and the surrounding area to define the hotel’s reputation and ever-evolving menus. As seasons and produce change (sometimes very quickly!), so will their exciting and imaginative food offerings. Ian sees his appointment as “a new long-term project with an awesome future”.

Ian is joining his partner, Ashley Proctor, who was appointed as general manager just before Christmas. She will be leading the front of house, accommodation and events teams, and ensuring all standards at The Mill remain high, with a welcoming and personalised service.
