It's a Win for Mud Foods!
Hampshire Fare member, Mud Foods is celebrating winning Class Champion in the Vegetarian Pie Class with its Squash, Spinach and Feta Cheese Pie at the British Pie Awards.
The awards, held on Friday 9th March during British Pie Week, have been running since 2009 to celebrate all that is good about great pies and promote the skills of those that produce them. Christian Barrington, founder and chief pie-maker at Mud Foods, collected Class Champion for his delicious Squash, Spinach and Feta Cheese Pie, which he describes as "chunks of butternut squash and sweet potato in a tomato sauce with spinach, feta cheese and a hint of chilli, encased in our legendary, handcrafted, buttery short crust pastry."
Christian also collected a highly commended award for his Chip Shop Curry Chicken pie in the Chicken Pie Class. The pie is made with chicken from Rother Valley Organics in a mild madras and coconut milk curry sauce with a sprinkling of fresh coriander, encased in their handcrafted, buttery short crust pastry.
The success didn't stop here with more of Mud Food's pies picking up awards. Their Steak and Ale Pie achieved Silver, Mushroom and Asparagus Pie - Silver, Chicken, Ham and Leek Pie - Silver, Lamb and Rosemary Pie - Silver, Dinosaur Pasty - Silver, Game Pie - Silver, Steak and Kidney Pie - Bronze and Pork and Chorizo Pie - Bronze.
Christian, said: “These awards mean so much to me and our team because it is their hard work that enables us to collect accolades such as this, year after year. We have never lost sight of our ambition of producing pies of great quality, using only the very best ingredients. Winning awards such as this confirms that it is achievable.”
Christian sources the finest local ingredients for his pies wherever possible and reveals the secret to his pie perfection is in the high filling to pastry ratio, as well as the butter content in his pastry, which is always made in house.
