A Simple Recipe for Lamb
Here's a simple yet delicious recipe for marinated lamb that's perfect for your Easter Sunday roast. The recipe is provided by Lisa Morgan of Lisa’s Larder and she suggests that it can be used with any joint, shoulder or leg, on the bone or boneless.
Simply make the marinade by mixing four cloves of crushed garlic, two teaspoons thyme leaves, juice of one lemon and three tablespoons oil. Make some cuts by slashing top of the lamb, smother in the marinade and leave overnight (preferably). To cook, remove the lamb from the marinade, carefully brown the meat, then place in a roasting tin. Pour over leftover marinade and roast as usual.
