A fresh taste of local at The Bistro, Four Seasons Hotel

The change in season and the completion of chef's new smokehouse has brought about an autumnal taste to the menus at Hampshire Fare member, The Bistro.

With fresh ideas and fresh ingredients the chef at Four Seasons Hotel Hampshire has created a winning combination of dishes for both lunch and dinner service.

The addition of a newly built, onsite smokehouse means that both residents and non-resident guests of the hotel can enjoy dishes with the authentic taste of the Hampshire countryside.

The new menus will follow the hotel's main focus and feature prominently ingredients that grow in Hampshire. The menu shall continue to change daily in order to reflect the seasonal availability of ingredients. Bistro favourites such as the Laverstoke Park Farm Beef Burger will remain, but diners will now be able to customise this classic dish by adding a slice of decadent Foie Gras, should they wish.

Classics such as the Beer Battered Fish and Chips still feature, but have been given a nod to the local, family run Andwell Brewery by using their Gold Muddler Ale in the batter mix. Casterbridge Rib Eye Steak still deserves its place on the menu however guests shall find new dishes such as Pork Belly with peaches, corn and Tamarind BBQ Sauce and House Smoked, Award Winning Sausages with BBQ Beans and Cavolo Nero alongside it.

House smoked meats shall be prominently featured on the menu, with a Pulled Pork Sandwich being served up at lunch and a stone baked BBQ Brisket Pizza at dinner. The nature of the Hotel's location means that a variety of woodchips are used in the smokehouse, with the overall flavour reflecting the availability of wood such as Beech and Oak. The hotel chefs are also enjoying testing out the flavours that the smokehouse brings by smoking their meats for anything from 2 hours up to 24 hours!

Four Seasons Hotel Hampshire is also delighted to be embracing throughout September, a global Four Seasons campaign that showcases and celebrates craft, local ales. The locally brewed, Gold Muddler ale by Andwell's brewery is featured in two deliciously classic dishes on the new Bistro menu and guests can also sample four additional local ales in Bar 1086. Guests are also encouraged to get involved in the Four Seasons Beerfest campaign by highlighting their favourites on social media and by using the twitter hashtag '#FSBeerFest'.

Guests can dine in The Bistro seven days a week with the lunch menu being served from 12 noon until 5.30pm and the dinner menu from 5.30pm until 10.30pm.
