5-Star Experience for Highbury College Student
Highbury Hospitality and Catering student Luke Radice has experienced first-hand the fast pace and attention to detail required in the kitchen of award-winning 5 star Lime Wood Hotel in the New Forest.
Organised by Chimes Restaurant @ Highbury College and Lime Wood, Luke had the opportunity to participate in work experience in the kitchens headed up by renowned duo Angela Hartnett and Luke Holder of Hartnett Holder & Co.
Luke Holder, Head Chef at Lime Wood Hotel, is passionate about sharing his craft with the chefs of tomorrow and works closely with his young team of apprentices to ensure their work is to the highest standard. Now students in college training are also getting the chance to learn from him.
Highbury College student Luke said: “It’s great fun to be part of the kitchen team at Lime Wood. They are so dedicated and passionate about food. Having the opportunity to be a chef in this environment is very inspiring.”
Highbury College has an international reputation for quality hospitality and catering training and is part of the Local Food project, which works to develop a network for the hospitality and catering industry to support chefs, cooks, food and beverage managers, local food suppliers and others in the local food industry.
