Peach Bourbon BBQ Glaze
Here is a great sweet and sour sticky glaze from Applegarth Farm Shop for all kinds of barbecued meats, fish and vegetables. The recipe uses store cupboard ingredients including local honey (try Becky’s Beezzzs, Mrs B’s Bees, Sinah Common Honey or Three Hares Honey) and local meats. Such quality meats make all the difference to the BBQ experience. These include Applegarth Farm’s own BBQ Box of flavoursome and tender meat from free-range traditional local breeds. The box comprises: four rump steaks; four kebabs in Rosemary and garlic; four beef burgers; four lamb and mint burgers; six sausages, all for £35.
Ingredients
50g dried dates
50g runny honey
50g apple cider vinegar
50g American mustard
50g muscovado sugar
100g ketchup
good splash of tabasco
good splash of Worcestershire sauce
100g tinned peaches
shot (or 2) of bourbon whiskey
Method
Place all the ingredients in a stainless steel pan and simmer gently, stirring frequently for 30-40 mins.
Allow to cool slightly, then puree in a blender until thick, smooth and glossy.
Enjoy with all kinds of barbecued meats, fish and vegetables by glazing when cooked or serving as a dip.
