New Restaurant for Lime Wood Hotel - 'Hartnett Holder & Co' To Open In January 2013

A new restaurant is being created at Lime Wood, the award-winning boutique hotel in the New Forest. 'Hartnett Holder & Co' will open in late January 2013 in the hotel's original dining room, which is undergoing an extensive makeover by interior designer, Martin Brudnizki (famous for his work at Le Caprice, Corrigan's, Hix, Scotts, and J. Sheekey Oyster Bar).

This is the first collaboration for Michelin-starred chef Angela Hartnett MBE since 2001 and it was the prospect of working with Luke Holder, Lime Wood's Head Chef that sealed this culinary union. Both chefs are famed for their informal, grounded style of cooking and their respect for provenance.

Commenting on the collaboration, Luke says: 'I've always been a fan of Angela's food and am really excited to be working with her. We are already working together on dishes for the new restaurant.' Diners are told to expect an extensive menu of Italian-influenced forest dishes, pulling together both Hartnett's and Holder's much-admired signature styles. Lime Wood is members of county food group Hampshire Fare and Lime Wood recently hosted a Hampshire Fare Members' Networking Event where Luke delighted his audience with his passion and appreciation of local produce.

The collaboration will complement the fresh, relaxed, confident approach of Lime Wood's new restaurant - forget the hushed, over-fussed experience that the term 'country house dining' conjures up. As Robin Hutson, Chairman of the Lime Wood Group says: 'This is FUN dining, not fine dining', going on to say 'we are absolutely delighted to be working with Angela at Lime Wood. I have been a long term fan of her cooking style but almost more importantly she is a lovely person who will fit right into the team.' This was important for Angela, who says that 'Luke and the team are a great bunch of fun yet really professional people - that's the reason why I wanted to work with them.'

Relaxed brasserie-luxe service will show off the simple, yet carefully created dishes in a comfortable and unpretentious environment. The sort of environment with which Martin Brudnizki has come to be associated. As he says, 'Lime Wood is the perfect place to mix exciting food, talented chefs and good design - so it's great to be a part of it. For the interior, we're looking to the heritage of the building to create an eclectic design that's full of character; a room to compliment both the restaurant's surroundings and the inspired cooking of Angela Hartnett and Luke Holder.'
