What's in Season: May

There’s the celebration of this traditional Hampshire ingredient at Alresford’s annual Watercress Festival, and the local watercress beds are abundant with the lush green peppery leaf. Could  this be our answer to wasabi? It certainly can pack a punch when added raw to salads and sandwiches. Cooked in soups it has a lovely, milder flavour. What’s more watercress is naturally rich in vitamin C, calcium, iron and folic acid.

Fruit and nuts: rhubarb

Vegetables and herbs: asparagus, broccoli, carrots, lettuce and salad leaves, new potatoes, peas, radishes, rocket, samphire, spinach, spring onions, watercress, wild nettles
