New award-winning chef brings his own catch

The Holiday Inn in Winchester has recently welcomed a new chef to its team. Chef Robert Quehan believes in using fresh and in season produce. He sources only the best local produce and even goes out on his boat to catch the freshest fish to serve at the Morn Hill Brasserie, at the four star new generation Holiday Inn Winchester.

'My great love is to take the chefs out to the forest to forage for mushrooms and taking them fishing on my boat and teaching them how to catch fresh fish', commented Robert, a keen fisherman with local knowledge of the Solent waters.

The hotel is set to benefit greatly from his hobby as he often brings his catch, mainly sea bass and cod, to the hotel and creates mouth watering dishes for daily specials, demonstrating his passion for cooking with fish on the hotel's latest a la carte menu, adding dishes such as Langoustine Tortellini and Poached Smoked Haddock & Curry Risotto. Robert's other hobby is foraging and with his in-depth knowledge of wild mushrooms dishes on offer to diners can include girolles, porcini and pied du mouton mushrooms which Robert and his team incorporate with local partridge.
