Make yours a Hampshire Pancake

2 large Hampshire eggs

125g plain local flour, sifted

350 ml/7fl oz local semi-skimmed milk

Pinch of salt

1tbsp sunflower oil

You will be able to find these local ingredients in farm shops across the county. Local brands to look out for include Claytons Eggs (www.claytoneggs.co.uk) and Fluffetts Farm (www.fluffettsfarm.co.uk) also produce and distribute eggs. Medina Dairy and Watsons is based in Hampshire and distributes milk across the county. Flour from Hampshire's Leckford Park is sold in Waitrose. Flour is also available from Winchester Mill.

1 - Sift the flour and salt into a large bowl and make a hole in the centre. Break the eggs into the hole and then add 75ml of the milk and the oil. Whisk and gradually incorporate the flour until you have a smooth batter.

2 - Add the rest of the milk gradually and gently whisk.

3 - Wipe the inside of the frying pan with oil using some kitchen paper. Heat the pan then pour in enough batter to thinly coat the base of the pan.

4 - Cook for about 30 seconds and then flip it using a fish slice or if you are feeling confident toss it!

Serve with your favourite topping or filling. Ideas for Hampshire fillings include cheese with ham or gammon, chicken and bacon with herbs, watercress and soft cheese. Sweet treats include a Hampshire pancake with a dollop of local icecream or seasonal fruit.
