The Café Life Awards has announced the finalists for the Great British Brunch challenge. The competition is designed to inspire innovation and creative pairing of food with the fabulous range of Tetley Teas.  

Katarina Willingham from Lemon & Soul Cookery School in Southampton has made it through to the final where contestants will be preparing their Brunch on September 21st for judging before a live theatre audience at lunch! The contemporary food to go show in the Business Design Centre, Islington. 
Celebrity Chef Theo Randall will be head judge along with a panel of industry experts. The live final will be held on Wednesday 21st September, the same day as the Café Life Awards, with the winners being announced at the gala dinner among the elite of the café industry.   

Katarina said: “I love making my own bread and my bread baking classes are one of my favourites. Chatting to the customers whilst kneading the dough is simply a lovely way how to break ice in the beginning of the class.  I enjoy drinking Earl Grey every day and I found it exciting to pair tea with stuffed bread. Stuffed focaccia is a perfect dish for a brunch, it is easy to make and because of the juicy stuffing it lasts over three days, unlike plain bread which is best eaten on the day of baking. You can use variety of sausage meat, cheese and herbs to make alterations to the dish. It can be eaten hot or cold, made spicy or fragrant with herbs. I am over the moon my dish of stuffed focaccia with Italain style sausage meat, peppers and cheese has impressed the judges to get to the live final."
