Hand made Charcuterie from farm reared meat, salami & air dried meats
Parsonage Farm is a family-run business located in Upton near Andover. Offering a warm and friendly personal service it sells local, quality meat from animals raised on-site using natural, environmentally balanced and sensitive traditional farming practices.
The owners, Sarah and John Mills promise you will not be disappointed if you enjoy tender meat with taste and texture. When you shop at Parsonage Farm you can be confident that the animals producing the meat have had a good life and that you are reducing your impact on the environment.
The ‘Preserving the Hampshire Hog’ project has helped Parsonage Farm to continue rearing Gloucester Old Spot cross Saddle Back Pigs. They also rear Angus and Belted Galloway cattle.
Sarah is grateful for the opportunities that the project has brought them: “The project has made a massive difference to our business. It has meant that we can continue raising pigs and working with other small Hampshire pig breeders. Being able to add charcuterie to our product range makes it a viable business. The project has also put us in touch with other producers, trainers and Hampshire Fare staff which has brought with it close working relationships and an invaluable support network.”
How can you buy charcuterie from Parsonage Farm?
Sarah and John have really embraced the project and are now regularly making and selling a delicious range of charcuterie
Varieties include coriander which won a Gold Award at the Great Hampshire Sausage and Pie Competition, red wine and garlic, fennel and garlic and Lamb and Beef spicy Merquez.
Hampshire air dried, beef, pork and Parson-Aged Ham, all cured with individual spice mixes and dried to produce a Hampshire version of Coppa, Lomo etc
You can buy directly from the farm the last Friday and Saturday of the month 10am-1pm. Sarah and John will also deliver locally free of charge. You can also call and email Parsonage Farm to arrange to have some items sent through the post.
