Set in the heart of the Berkshire countryside, Blackberry Cottage was founded by Kate Saunders. Baking every day, using ingredients and suppliers that are local to them, including eggs from their own chickens, the team have designed a whole range of vegetable cakes.
Their ultimate aim is to make the vegetable the biggest ingredient in the cake whilst still tasting like a regular cake. By introducing vegetables in such large proportions they can often reduce refined sugars and fats, and in some recipes, none are added.
